Directions for dough

  1. Develop to a silky dough
  2. Start mixing on low speed for 2 minutes then high speed for 8 minutes or till dough develops.
  3. Final Dough Temperature: 26°C
  4. Bulk Fermentation: 15 minutes
  5. Portion Weight: 50 gm x 27 pieces
  6. Intermediate Proof: 15 minutes
  7. Shape: Round (50gm x 27)
  8. Eggs Wash: Yes
  9. Deposit 15g cheese filling, sprinkle with chocolate chips
  10. Final Proof: 30 minutes or till double the size
  11. Baking Temperature: Top: 180°C, Bottom: 180°C
  12. Baking Time: 30 minutes or till cooked

Directions for filling / topping:

  1. Combine all the ingredients together to make a cheese filling.
  2. Deposit 15gm into each bun.
  3. Sprinkle with chocolate chips.
