- RedMan Bread Flour (591g)
- Water (449g)
- RedMan Fine Sugar (124g)
- RedMan Instant Dry Yeast (17g)
- RedMan Pink Himalayan Salt (10g)
- Petit Normand Unsalted Butter (69g)
- RedMan Mixed Citrus Peels (138g)
Ingredients for filling / topping (15gm x 27):
- Redman Cream Cheese 300g
- Petit Normand Unsalted Butter 100g
- RedMan Icing Sugar 80g
Bakeway Dark Bakeable Chocolate Chips 400g

Directions for dough
- Develop to a silky dough
- Start mixing on low speed for 2 minutes then high speed for 8 minutes or till dough develops.
- Final Dough Temperature: 26°C
- Bulk Fermentation: 15 minutes
- Portion Weight: 50 gm x 27 pieces
- Intermediate Proof: 15 minutes
- Shape: Round (50gm x 27)
- Eggs Wash: Yes
- Deposit 15g cheese filling, sprinkle with chocolate chips
- Final Proof: 30 minutes or till double the size
- Baking Temperature: Top: 180°C, Bottom: 180°C
- Baking Time: 30 minutes or till cooked
Directions for filling / topping:
- Combine all the ingredients together to make a cheese filling.
- Deposit 15gm into each bun.
- Sprinkle with chocolate chips.
