This delicious salchichon is a Spanish summer dry-cured sausage. It is made from pork of the famed black-hoofed Iberico pig, native to Spain. The meat and fat are chopped in thin bits, seasoned with salt, pepper, spices such as nutmeg, and oregano. Slice thinly to complement any cold cut or cheese platter, dice thickly to throw into any pasta dish for delicious smoky flavor.
