Sorbitol is a common replacement for sugar and is especially popular in baked goods. The sugar alcohols present in sorbitol results in a soft texture in its end products, yet preserving the sweetness of the dish. Sorbitol is often used as an alternative to pure sugar for diet foods, and is also a favourite to use in baking goods the likes of cakes, biscuits, icings, pastry and fillings. It should, however, be taken in moderation as consumption of sorbitol in large amounts may result in stomach upsets. It should be kept in a cool environment and well-sealed.
How to use
Sorbitol can be mixed into the dish as instructed in your recipe. It can be used in many low calorie and diabetic products. Please note that sorbitol does not brown when heat is applied like regular sugar.
Aside from savoury desserts such as madeleines, sorbitol can be found in almost any dish as it is also seen as a sugar substitute. This includes baked goods, desserts, ganache, chocolates and confectionary items.
Sugar syrup or Liquid glucose can be used as a substitute. Other sugars or sweeteners can also be considered, but the sweetness level may vary.Suitable For
