Made in Belgium, our Redman Cocoa Mass is dark in colour and has a hard structure. With an intense and strong flavour profile, it is used to intensify recipes that have chocolate in them.
How to use
This product is commonly used to tune the flavour profile of chocolates or products with chocolates. Add this to chocolate ganaches, achieve variations in chocolate truffles, or pralines. It can be used to achieve a deeper brown hue or more intense cocoa flavour. This should be mixed into your recipe as instructed.
