Our Redman Top Flour is a specialty premium flour that is made here in Singapore. This super fine flour gives extra fine texture to the final product. Our top flour has the lowest protein content, and is suitable for sponge cakes and mooncake skins. It is best used for light and fluffy cakes, and gives your baked goods both a fine crumb structure and healthy crumb colour.

This top flour is made from soft wheat, and is processed to achieve a very soft and fine texture. This adds to the tender texture of your final product. Being a low gluten flour, it has properties similar to that of cake flour. The top flour, however, allows for a smoothness in your product that allows it to be light and dry. The "melt-in-your-mouth" texture can be achieved with our premium flour. The product should be stored in a cool and dry place.

How to use

This flour should be mixed in evenly as instructed in your recipe.

It is popularly used in souffle pancakes, chiffon cakes, butter cookies, swiss rolls, crepes and doughnuts.
