Our rye flour is produced from cleaned rye and barley. Rye flour does not form gluten like other flours, resulting in a loaf volume that is much lower. Baked goods made with rye flour are also found to be much denser as compared to when other flours are used. Rye flour is best stored in a cool, dry, and dark location.

Rye flour is commonly used as a flavouring element in recipes with wheat flour. It should be mixed into your dough as instructed in your recipe.
