Method

1. In a bowl, mix the RedMan snowskin premix, juice binder, shortening and cocoa powder.
2. Add the rest of the snowskin dough ingredients and mix until a dough forms.
3. Divide the snowskin dough and filling into 25gm balls each.

4. Wrap each filling ball with the snowskin dough, then place in mooncake press set mould. 
5. Unmould and keep chilled before serving.

Method

1. In a bowl, mix the butter and sugar. 

2. Then add in the egg yolks and mix well. 
3. Add in the balance dough ingredients and mix until a dough forms. 
4. Divide the dough into 40gm portions, roll into balls. 
5. Divide your chosen mooncake paste into 85gm portions, roll into balls. 
6. Roll the dough balls into a thin layer. 
7. Gently wrap each filling ball with the think layer of dough. 
8. Place each completed mooncake onto a baking tray, brush with egg yolk and sprinkle the grated parmesan onto each mooncake to create a nice salty crust. 
9. Bake at 200 degrees Celsius for 20 minutes.

Method

Pandan & Gula Melaka Syrup

1. Put all ingredients into a pot and boil until syrupy.
2. Remove from the stove and strain.
3. Let the syrup cool before using.

Snowskin Mooncake

1. Bake the Hong Kong flour at 100 degrees Celsius for 1 hour.
2. In a bowl, combine the kou fen, cooled hong kong flour and icing sugar then sieve to remove lumps. 

3. Next, add the pandan syrup and olive oil and mix until a dough forms. 
4. Roll the snowskin dough into 20gm balls and flatten into thin sheets.
5. Roll the Durian filling into 25gm balls. 
6. Wrap the durian filling balls with the snowskin dough sheets. 
7. Dust mooncake press mould with kou fen, then place the combined balls into the mould. 
8. Press and unmould. 
9. Your snowskin mooncake is ready! Chill before serving.

Method

Filling 
1. Mix all filling ingredients together. 

Mooncake
1. In a bowl, mix the olive oil, alkaline water and golden syrup.
2. Fold in the flours and mix until a dough forms.
3. Let the dough rest for 15 minutes.
4. Next, divide the dough into 40gm balls.
5. Then divide the filling into 85gm balls. 

6. Wrap the filling with the dough. 
7. Use a mooncake mould, or a mooncake press set mould to shape your mooncake. 
8. Arrange the moulded mooncakes on a baking tray. 
9. Spray a little bit of water over the mooncakes and bake at 200 degrees Celsius for 10 minutes. 
10. After 10 minutes, remove and brush with egg yolk.
11. Bake again for another 10 minutes. 
12. Take out from oven and immediately brush with super glaze.

Method

1. In a bowl, mix the glutinous rice flour (Kao Fen), icing sugar, flavouring and shortening. Then add water and mix till a dough forms. 

2. Cling wrap the dough and let rest for at least 15 minutes. 
3. Roll the lotus paste into 25gm balls. 
4. Roll the snowskin dough into 20gm portions. 
5. Wrap the filling balls in the snowskin dough portions. 
6. Using a mooncake press set mould, dust with kao fen and place the combined mooncake ball into the mould. 
7. Press down gently and unmould the mooncake. 
8. Chilled your snowskin mooncakes before serving.
