Kueh Lapis

Kueh Lapis is a traditional Indonesian layered cake interlaced with fruits. Fragrant, bouncy and buttery, these light layered cake are loved for their richly sweet and spiced infused flavors. Choose one of these three distinct flavors - Classic, Dried Longan and Durian Puree.

Details

  • Duration: 4 hours
  • Take home portion: 1 piece, 7x10 inches
  • Type: Hands-On
  • Minimum age: 12 years old
  • All classes will conduct in English
  • Equipment, tools, ingredients, apron and boxes will be provided. 
  • Bring a pen for taking notes. 
  • Participants may have to work in groups depending on class recipe. 

Terms and Conditions

  • Only paid and registered participants may join the class. 
  • Class starts on time. If class has already started for 20 mins or more, latecomers will not be admitted to the class. No refunds will be given. 
  • All remaining ingredients and tools are to remain in the baking studio.
  • Participants are required to wash up during and after class.  General housekeeping is expected of each participant.
  • General social etiquette and decorum during class is expected from each participant.
  • Classes may be cancelled two days before class start date due to the following reasons:
  1. Minimum number of students is not attained.
  2. Chef/ Instructor can no longer make it for class.
  • In the event that class is cancelled, an email will be sent to inform of the cancellation. A full refund will be given. 
  • Refund or transfer of class on course date is strictly not allowed except for the following reasons:
  1. On medical grounds with an medical certificate (MC) with the same date as class date.  MC must be emailed to customerservice@redmanshop.com within three (3) working days. No further refund or transfer of course will be entertained after the three (3) working days grace period.
  2. On compassionate grounds.
  • Refund process is dependent on the mode of payment used.
  1. Paid by Cash – Refund by cheque or bank transfer. This will take about 3-5 working days 
  2. Paid by Paypal/Visa/Mastercard – Refund will take 5-7working days.
  3. Paid by Credit Card – Refund will be reflected on next credit card statement.

Chef Julie Yee

Julie spent much of her childhood helping her Nonya grandmother make Nonya pastries for sale and also cooking for her big family on weekends. Her cooking and baking styles are greatly influenced by her grandmother, who relies mainly on fresh ingredients and heritage recipes. Passionate in experimenting with more efficient ways to cook traditional dishes, Julie also enjoys fusing different baking techniques to churn out new recipes.

After completing her Diploma in Cake-Baking, Julie did not rest on her laurels and continuously strive to improve her skills by taking up courses such as Advanced Bread Making, Petits Fours and Cake Decoration. Her most recent course was at the Macaron Pastry Training Center in Bangkok under the mentorship of Chef Eric Perez, whom she credits as a huge inspiration. Besides widening her baking horizons in Modern French Baking and Chocolate Confectioneries, Chef Eric’s lifelong devotion and creativity in baking have left a deep impression on her.

For over a decade, Julie has been giving lessons in baking and cooking on a freelance basis at Julie’s Baking Lab. As a creative soul, Julie has been holding bakery classes themed around pastries and produces in different regions and styles. She contributes recipes periodically to Lianhe Zaobao under Da Jia Chu Fang column for the Chinese readers.
