Continue boiling for 35 minutes and stir occasionally. Simmer pearls in the pot for 15 minutes after and continue to stir occasionally. Discard boiling water and cool pearls under running tap water. You may add ice if necessary. Submerge pearls in water and add desired quantity of honey or brown sugar. Keep in a cool place and do not refrigerate.
